Differences between table salt and sea salt

Table salt

Table salt is a highly refined product. It goes through a process that removes magnesium and other minerals. As salt is naturally hygroscopic (it retains water easily), aluminium compounds and other additives, such as silica, are added to the already refined salt.

The natural iodine is destroyed during the refining process and is added back in the form of potassium iodide, often at toxic levels. Dextrose (sugar) is added as a stabiliser, which interacts with the salt and changes its colour. A bleaching agent is also used to whiten the salt.

Sea salt

High-quality salt, such as sea salt, is dried naturally in the sun. It is unprocessed and still contains microscopic amounts of marine life that provide natural iodine. It is slightly moist and naturally grey in colour.

Sea salt has a more intense flavour than table salt. It is used much less in cooking to produce the same results.
